Makes 12 pancakes


  • 3/4 pound sweet potatoes

  • 1 cup all purpose flour

  • 1/2 cup oats (uncooked oatmeal)

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon cinnamon

  • 1 teaspoon vanilla

  • 2 eggs, beaten

  • 1 1/2 cups milk

  • 3 tablespoons Butter Olive Oil

  • chopped pecans

  • Craisins


Place potatoes in a medium sauce pan of boiling water and cook until tender. Drain and immerse in cold water. Remove skins and mash warm potatoes.

Mix dry ingredients and spices together. In another bowl mix mashed sweet potatoes, eggs milk and Butter Olive Oil. Add to the dry ingredients to create a batter. Stir in pecans and Craisins, if desired.

Heat a pancake griddle to medium-high heat. Drop batter by heaping tablespoonful and cook until golden brown, turning once when the surface begins to bubble.
