INGREDIENTS:
- 1 avocado, peeled and pitted
- 1/2 cup fresh parsley leaves
- 2 tablespoons fresh basil leaves
- 2 tablespoons fresh chives, chopped
- 1 teaspoon fresh tarragon leaves
- 1/2 cup The Classy Cruet EVOO-Medium Intensity
- 3 tablespoons fresh lemon juice
- 1/2 cup plain Greek yogurt
- 2 garlic cloves
- 3 anchovy fillets (optional)
- 1 teaspoon Jane’s Italian Seasoning
- Salt and black pepper, to taste
DIRECTIONS:
- Blend: Place avocado, parsley, basil, chives, tarragon, olive oil, lemon juice, Greek yogurt, garlic, anchovies (if using), seasoning, salt, and pepper in a blender or food processor.
- Adjust: Blend until smooth and creamy. Add a splash of water if you prefer a thinner consistency.
- Taste: Adjust with extra lemon, salt, or herbs as desired.
- Chill and Serve: Refrigerate at least 30 minutes for flavors to meld
