This wine vinegar is made using the Orléans method, developed in the 14th century. To start fermentation, oak barrels of wine are inoculated with a “mother of vinegar”—a cellulose glob loaded with acetic acid bacteria from an established vinegar. Periodically, vinegar is drawn off and fresh, high quality Pinot Grigio wine is added; the process continues until all the alcohol is converted into acetic acid. This meticulous method makes for the most flavorful wine vinegar because it gives the flavor compounds time to develop and mature. How are our balsamic vinegars made?

Our dark balsamic condimento is crafted in Modena, Italy from cooked, high quality Trebbiano and Lambrusco grape must, following the Tradizionale method. All of our balsamics are made by slowly simmering these grapes in copper cauldrons, over an open wood fire, and then combining this reduction with older balsamic vinegar, in order to help speed acidification. Aged using the Solera method, with barrels made of oak, ash, juniper, cherry, mulberry, or chestnut containing this must become progressively smaller as the balsamic becomes thicker and naturally evaporates over time. Each wooden barrel used previously contained residual amounts of older balsamic that dates back as far as 18 years, and in some cases, as far back as 25 years. This adds to the rich aroma, flavor, and color. 

It is the knowledge and skill of the artisan that really makes the greatest balsamic. Like wine making, balsamic vinegar masters to aim for particular flavors - a balance of juniper, oak, and cherry wood flavors the perfect balance between sweet and sour.


Our white balsamic condimento undergoes the same cooking process as our dark balsamic condimento, with one exception: the white balsamic condimento is aged in stainless steel vats, which results in a crisp, tart vinegar with a touch of sweetness and 4% acidity.


Our balsamic vinegar is certified to come from Modena, Italy. It contains only natural ingredients and no artificial flavorings or chemical enhancements.

How to Make a Balsamic Vinegar Reduction:

Bring the balsamic to a simmering boil. Whisk constantly while maintaining a slow boil, until about half of the volume is reduced by evaporation, thereby thickening the consistency and also intensifying the flavor. 

This mixtures is sometimes referred to as a reduction or a glaze. 

It can be used to finish both sweet and savory dishes of your choice.

Balsamic, Beet and Berry Salad

VINAIGRETTE:
  • 9 tablespoons lemon olive oil
  • 3 tablespoon blueberry balsamic vinegar
  • 3 teaspoon honey
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon pepper
  • 3 teaspoon finely chopped fresh rosemary


SALAD:
  • 6 cups spinach
  • 3/4 cup strawberries
  • 3/4 cup blueberries and blackberries
  • 1 1/2 cup thinly sliced raw beets
  • 2 1/4 ounce crumbled goat cheese
  • 4 1/2 tablespoons chopped toasted walnuts


Directions:

To prepare vinaigrette, combine first 6 ingredients in a small bowl, stirring well with a whisk. Reserve 1 tablespoon vinaigrette. 


To prepare salad, combine spinach, fruit, and beets on a plate; sprinkle with cheese and walnuts. Add 1 tablespoon vinaigrette; toss well.


Top Tips for Tossing Sprinkle Lightly:

Crumbly cheeses (100 calories per ounce), chopped nuts (50 calories per tablespoon), bacon (25 calories per slice), and dried fruits (25 calories per tablespoon) are tasty but calorie-dense. Add these at the end. Plate It: Serve your salad on a plate to keep all those tasty (and heavy) toppings from collecting in the bottom, as they might in a bowl.


Dress with Less: A little of our dressing goes a long way. Start with 1 tablespoon; toss well. If the greens still seem dry, add more 1 teaspoon at a time.

Salad Dressings 

Raspberry Vinaigrette:
     1 cup Raspberry Balsamic Vinegar
     1 cup Lemon Olive Oil

Italian Vinaigrette:
     1 cup Tuscan Herb Olive Oil
     1 cup Sicilian Lemon White Balsamic      Vinegar

Balsamic Dijon:
     3 tbsp. Dijon Mustard
     3 tbsp. Honey
     1 cup Extra Virgin Olive Oil (I 
     recommend using a mild one)
     1 cup A-Premium Balsamic Vinegar

Blood Orange/Cranberry Pear:
     1 cup Blood Orange Olive Oil
     1 cup Cranberry Pear White
     Balsamic Vinegar

Greek:
     2 tbsp. Kalamata Olives
     1-2 large cloves of Garlic
     2 tbsp. Oregano
     2 tbsp. Lemon Juice
     1/2 cup Red Wine Vinegar
     1 cup Extra Virgin Olive Oil (I
     recommend using a medium or
     robust one)

Lemon/Blueberry:
     1 cup Lemon Olive Oil
     1 cup Blueberry Balsamic Vinegar 

Berries with Balsamic and Honey

Ingredients:

     4 containers of strawberries

     3 containers of blueberries

     3 containers of raspberries

     2 oranges


  • Rinse the strawberries and blueberries, and cut the strawberries into smaller chunks. 
  • Whisk together one cup of honey and 3 tablespoons each of Coconut, Pineapple, and Peach balsamic vinegars (or any vinegars of your choice).
  • Pour over the berries and refrigerate for 2-3 hours.
  • Just before serving, gently fold in the raspberries and orange zest.
