Antioxidant Properties:  Oxidation reactions taking place in the human body to produce energy, conduce to formation of cell damaging free radicals as natural by-products. Free radicals damage cell membranes and manifest themselves in terms of premature aging, hardening of arterial walls and cancer. Antioxidants from balsamic vinegar destroy these free radicals and prevent cells from being destroyed.


Fights Cancer:  The grapes from which balsamic vinegar is formed is known to contain a bioflavonoid called quercetin, which has antioxidant properties. Along with vitamin C, this antioxidant strengthens the immune system to fight cancer and other infectious diseases and inflammations. Balsamic vinegar also contains polyphenols which are anticancer agents.


Reduces Risks of Heart Attacks:  

Balsamic vinegar is low in saturated fat and is believed to reduce cholesterol. Moreover, since it is low in sodium, it enhances heart health and reduces high blood pressure.

Fresh Caprese Salad with Traditional Balsamic Vinegar

Balsamic, Beet and Berry Salad

VINAIGRETTE:
  • 9 tablespoons lemon olive oil
  • 3 tablespoon blueberry balsamic vinegar
  • 3 teaspoon honey
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon pepper
  • 3 teaspoon finely chopped fresh rosemary


SALAD:
  • 6 cups spinach
  • 3/4 cup strawberries
  • 3/4 cup blueberries and blackberries
  • 1 1/2 cup thinly sliced raw beets
  • 2 1/4 ounce crumbled goat cheese
  • 4 1/2 tablespoons chopped toasted walnuts


Directions:

To prepare vinaigrette, combine first 6 ingredients in a small bowl, stirring well with a whisk. Reserve 1 tablespoon vinaigrette. 


To prepare salad, combine spinach, fruit, and beets on a plate; sprinkle with cheese and walnuts. Add 1 tablespoon vinaigrette; toss well.


Top Tips for Tossing Sprinkle Lightly:

Crumbly cheeses (100 calories per ounce), chopped nuts (50 calories per tablespoon), bacon (25 calories per slice), and dried fruits (25 calories per tablespoon) are tasty but calorie-dense. Add these at the end. Plate It: Serve your salad on a plate to keep all those tasty (and heavy) toppings from collecting in the bottom, as they might in a bowl.


Dress with Less: A little of our dressing goes a long way. Start with 1 tablespoon; toss well. If the greens still seem dry, add more 1 teaspoon at a time.

BLUEBERRY LEMON-THYME SPARKLING SHRUB

  • 2 cups Sicilian Lemon White Balsamic Vinegar
  • 1 cup fresh blueberries crushed
  • 2” sprig fresh thyme (optional)
  • 8 cups chilled sparkling water or champagne


STRAWBERRY-PEACH/APRICOT BALSAMIC SPARKLING SHRUB

  • 2 cups Peach or Apricot White Balsamic Vinegar
  • 1 cup fresh strawberries coarsely chopped
  • 8 cups chilled sparkling water or champagne


FRESH KIWI & MANGO WHITE BALSAMIC SPARKLING SHRUB

  • 2 cups Mango White Balsamic Vinegar
  • 1 cup peeled sliced kiwi fruit
  • 8 cups chilled sparkling water or champagne


Instructions

In a one liter mason jar or container add the fresh botanical ingredients. Pour the balsamic over the fruit and allow to "infuse" for at least one hour or up to four hours under refrigeration. The longer it sits, the more pronounced the flavor of the fruit infusion. Strain and keep refrigerated and tightly covered for up to one month.


To serve, add 1-2 tablespoons of infused drinking vinegar (shrub) depending on your preference for sweetness to 8 oz. of chilled sparkling water or champagne. Serve over ice if desired.
